May 31: Enjoy a Historic Treat on National Macaroon Day

Is the macaroon a cake or a cookie? With its soft center, the macaroon is often mistaken as a cake. However, with no flour, it cannot be classified as a cake. As a cookie, it is a very fancy variety with a mix of textures and flavors, similar to the meringue. No matter its true classification or nature, the macaroon is a popular dessert worthy of a celebration.


The origin of the macaroon has been traced to a 9th century Italian monastery. A group of monks and royal pastry chefs brought them to France in 1533.  The first macaroon recipes started appearing in cookbooks around 1725.  During the French Revolution, two Benedictine nuns financed their asylum status by baking and selling macaroons.  As their popularity grew, regional varieties developed in Scotland, Spain, and North America.
