September 14: Recipes for Yom Kippur

Yom Kippur is the holiest day of the Jewish calendar, so it seems self-evident that the food consumed after the period of fasting must be of a special variety. It tends to be a breakfast meal that breaks the fast, but when a simple bagel won't satiate hunger, kugel comes to the rescue of many Jewish recipes and menus.

The etymology of the term 'kugel' is German, and it's believed that kugel itself originates from eastern Europe. Hungarian and Polish cooks, who added sugar and cinnamon respectively to kugel recipes, are believed to be responsible for the dish's conversion into a dessert.

Nowadays, the aesthetically-striking kugel - which looks great in culinary photography - is less common in Europe, and instead favored in Israel and the United States.
