Delicious Chocolate Bundt Cake

Today she shares with us her recipe for a delicious Chocolate Bundt Cake you can enjoy on this lovely Saturday!

SiobhanSlattery-siobhan5454-foodEveryone needs a really good recipe for a chocolate cake! Whether you need it for an occasion or even tea-time, a cake is always welcome.

This cake is fantastic. It is really light and chocolaty, without being rich or heavy! The icing used is easy to make and not too dense for the cake. Applied lightly to the cake, it provides an extra sweet taste, perfect with the cake!

Ingredients:

Cake:

2 ½ cups flour

½ cup Cocoa

1/2 tsp Baking Soda

¾ tsp Salt

½ cup Milk

½ cup Sour Cream

8 oz Butter

1 ½ cups Sugar

4 Eggs

1 tsp Vanilla

Icing:

50g Butter (soft)

15g Cocoa

80g Icing Sugar

10ml Water

Method:


Cake:

  1. Preheat the oven to 180c. Butter a Bundt cake tin evenly and set aside. In a medium bowl, mix the flour, cocoa, baking soda and salt until combined.
  2. Add the sour cream into the milk and stir until evenly combined.
  3. In a large bowl, mix together the butter and sugar. Then add the eggs one by one. Ensure each egg is fully mixed in, before adding the next. Add the vanilla and mix.
  4. On a slow speed, add in one third of the flour mixture into the butter mixture. Then add one third of the milk mixture and fully combine. Continue adding the flour followed by the milk until the mixture is smooth and creamy.
  5. Scoop the mixture out into the tin and smoothen the surface. Place in the preheated oven for 55-60 minutes, or until an inserted skewer comes out clean.

Icing:

  1. In a bowl, combine the butter, cocoa, icing sugar and water. Mix until it is smooth and there are no lumps.
  2. The icing should be runny and not too thick.
  3. When the cake is cooled, drizzle the icing over the top evenly. The cut into it and enjoy!

This cake is really tasty and the perfect treat for tea-time. Enjoy!
