Home Made Dharwad Peda - Soft Milk Fudge

Peda, also called as pedha or pera is a soft milk fudge dessert from Indian subcontinent. The main ingredients include khoya,sugar and cardamom powder or saffron strands. Just like ladoos, pedas are offered as Prasad in Hindu Religion. Earlier I had prepared Goan Dudh pedha which is of harder consistency and today, prepared this delicious and soft pedhas called Dharwad peda or kandi peda. Dharwad pedas are famous in Dharwad region, which is situated at the border of Maharashtra and Karnataka. These are specially made during weddings. I have always bought these sweets from market , but thought of giving it a try in my kitchen . I have prepared these pedhas using homemade crumbled paneer or Indian Ricotta Cheese. The process how to make ricotta cheese is explained below in my recipe . You can also use khoya for this recipe to save time. Just make sure that the process is constantly attended, otherwise pedas will get burnt smell if the mixture sticks to the bottom of the pan. Of course it is time consuming thing to prepare any kind of pedas at home from scratch, but the final outcome is just fabulous. So let us see how to make Dharwad Peda from scratch.

These pav are famous in Goa where I grew up. Pav means a small loaf of bread and got it’s name from pão – a portuguese word for bread. I remember when we used to get nice hot freshly baked paav with great aroma coming out. Never had chance to experience once we moved to Mumbai. Then later here in USA , I totally missed those rolls. Of course here you get different variety of freshly baked bread but I miss the taste of pure Goan bread. I sincerely tried these dinner rolls recipe and believe me , the taste came exactly the same as Goan pav and they are the best for any kind of gravy items like pav bhaji, misal pav or even the chicken curry.

You can prepare numerous dishes with various variations suiting your tastebuds. You can add seafood or chicken or vegetables of your choice. I have prepared this healthy pasta with shrimp and spinach.The recipe is quite easy and quick. Of course you can do variations to this by adding more of other vegetables like carrots, beans etc. I wanted it to be simple and creamy so here is the recipe for it.

Honey Glazed Easy Chicken Wings(Baked)

Whenever you want some quick appetizers, go for Chicken wings. But the problem is, most of the chicken wings are deep fried and if you are health conscious, then obviously it is not an option. So go for baked or grilled ones. They taste equally delicious and very easy to cook and also you can eat how many you want without any guilt. Also, if you are more health conscious, try to remove skin from the wings or use boneless skinless chicken pieces instead of wings for this recipe. These wings are great especially , if you have a large crowd, prepare your marinade in advance. You can even prepare it 3-4 days in advance, refrigerate and then just warm it up whenever required. But let me warn you !! Make extras, because , I am pretty sure, the moment you take them out of the oven, they will disappear. My own personnel experience. For marinade, you can also use ginger if you like the taste of it,but I skipped it. You can also go for Teriyaki Chicken Wings or Lemon Pepper chicken Wings if you like. But I personally like my wings to be hot with some sweetness too. So I used hot sauce , along with honey.

This is Goan(Indian) way to shallow fry these oysters. The recipe is very simple and also requires minimum number of ingredients. Here they are coated with some spices and semolina-rice flour mixture which you already have in your kitchen and then with little oil, pan fried on a skillet. But they just have to be completely dry before frying otherwise they will loose all the spices they are coated with.

It is then served with vegetables like broccoli and Chinese baby corn. In my recipe, I have done the exact same process but instead of deep frying the chicken pieces, I have baked them. Only remember to use low sodium soy sauce , otherwise it will make your dish salty. If you can’t find low sodium one, then decrease the quantity of soy sauce and increase the quantity of water.

If you want to prepare something for appetizer , which is also oil free, why not try out these spicy baked chicken drumsticks. They are very easy to prepare, oven baked with garlicky flavor. To prepare this , first of all you have to marinade the drumsticks well, to get the flavor absorbed in well. So it is always better to keep the pieces marinated the previous day and then just bake the next day. But if you are in a hurry, then at least make sure you marinade them for 1 hour. You can also deep fry these drumsticks if not health conscious, but they taste equally good , baked. Also you can modify the spices according to your taste buds. I like it with more garlic.

So , I have tried out this wonderful and best ice cream at home within few minutes. Of course it takes a long time to set , but it is worth . I was in a hurry so prepared this eggless coconut ice cream using store bought tender coconut meat ,but you can always buy a fresh tender coconut , remove the meat and then prepare using it. This ice cream becomes even more delicious and tasty ,if you use some coconut milk along with coconut water in it , but I skipped that part. You can always play around with this ice cream by using your imaginations, by drizzling honey or sprinkling some dry shredded coconut and nuts or by serving it as it is.

Dates and Nuts Kheer - Sugar Free Dessert

In my recipe, I have soaked around 8-10 dates and some nuts in warm milk for about 15 minutes and then put them in the grinder to make paste. Don’t have to fry or saute this paste. Just drop it in the prepared thick milk, mix and serve. And oh yes! you can always substitute full fat milk with almond milk.
