Grilled Chicken with Coconut Milk Marinade

As long as you can still grill, it’s still summer. So come on, keep summer alive with this zesty, Thai-inspired grilled chicken with coconut milk marinade. Chicken breasts have a bad reputation for drying out, especially on the grill. We’ve solved that problem by allowing the chicken to marinade for at least 8 hours before cooking. With such a long time to marinade, the meat can soak up not only great flavor, but extra moisture to keep it juicy while grilling. Another great tip for perfectly grilled chicken, is to use a meat thermometer to check doneness. Remove the chicken as soon as it reaches the desired internal temperature. For chicken breasts, the ideal temperature is 170 degrees F.

The Best Christmas Punch Recipes

Mmm, punch. Today we think of it as a sugary sweet drink for a kid’s birthday party, but punch, especially Christmas punch, has a long and interesting history. Hot mulled wine, called wassail in merry old England, was once popular at winter parties of all kinds. Not only was a hot drink appreciated during a cold winter night, but the spices used were the same that were loved in holiday baked goods. In the food world, nothing says Christmas like the scent of cinnamon and cloves. Our Christmas punch recipe isn’t quite as complex as those of yore, but it’s just as delicious. We recommend making a double batch—keep half warming in a slow cooker set on low—so a hot serving is always ready. If you haven’t got a traditional punch bowl laying around, pour the drink into your prettiest ceramic or pottery bowl, surround the bottom with some greenery and other holiday decorations and you’ve got a wonderfully festive serving container. Don’t forget to provide a ladle so guests can help themselves. When should you serve Christmas punch? Anytime, really but it’s especially delicious with dessert and would pair perfectly with our Gluten-Free Gingerbread Cookies. It’s also a welcoming refreshment for guests when they first arrive to your home for a holiday get-togther.

Holiday Fruit Salad with Coconut Sugar

Not everything on the holiday dinner table needs to be heavy and full of fat—that’s where our Holiday Fruit Salad with Coconut Sugar comes in. Sometimes you just need that one more thing to balance out a big meal, and usually that thing is something fresh and light. Of course the flavor has to be there too. When there are pies and cookies and three different potato dishes to choose from, a plain tray of fruit doesn’t have much appeal. The secret ingredient of coconut sugar gives this recipe that extra something special that will have your guests and family coming back for seconds. For the best results, prepare this dish with seasonal fruit that’s available in your area. Citrus is at its peak in the winter, feel free to substitute orange segments for the grapefruit or add any other favorite fruits you family loves. Keep the portions correct—about 5 cups of fruit in all—to make sure there’s enough dressing to add maximum flavor. Make this dish for a traditional sit-down meal, a buffet or holiday potluck. We promise, they’ll gobble it up!

No-Roll Sugar Cookies with Coconut Oil

Sugar cookies are a staple of the holiday season. Decorating cookies with the kids is a special tradition in many homes, and this “no-roll” recipe makes is easier to have family fun. Our sugar cookies with coconut oil have all the sweet simplicity you’d expect, but with the added bonus of coconut oil. Coco Treasure pure unrefined coconut oil adds an extra depth of flavor to baked goods—not to mention all the health benefits such as powerful antioxidants and cholesterol-lowering lauric acid. Coco Treasure pure unrefined coconut oil adds an extra depth of flavor to baked goods—not to mention all the health benefits such as powerful antioxidants and cholesterol-lowering lauric acid. For beautiful cookies you need the perfect icing, and classic Royal Icing is perfect for these old fashioned Christmas cookies. To make Royal Icing simply combine 3 1/3 cups powdered sugar with 2 large egg whites (remember, raw egg is not recommended for certain people). Beat the mixture on medium-high speed until it’s white and glossy and has tripled in volume. Divide into smaller bowls and tint with food coloring as desired.

Easy Christmas Ham Steak

Not every holiday gathering involves a dozen people and at least that many pies. Sometimes a simple but elegant meal that doesn’t take all day is the best gift ever. Our recipe for Christmas ham steak is perfect for an intimate dinner or as a main course for holiday buffet. With only 5 ingredients it’s easy and economical but still tastes special enough for a celebration meal. Pair our Christmas ham with au gratin potatoes and Savory Roasted Brussels Sprouts and a bakery-shop pie for a complete meal that you didn’t have to spend days preparing. As mentioned, this recipe has only 5 ingredients—including the ham—and 3 of them are coconut-based. Using coconut sugar and coconut nectar syrup instead of brown sugar and molasses will prevent the glaze from becoming overly sweet plus the coconut products add a more complex flavor to this simple dish. Because ham is the star of the show, be certain to choose high-quality cooked ham steak about 3/4-inch thick. Approximately 1lb of steak is enough to serve four people.

Margarita Cheesecake Bars

Summertime. If it’s too hot to cook a big meal, it’s probably too hot to bake dessert. Ice cream is a delicious option when the temperatures soar, but even that sweet treat can get a little tiresome if enjoyed too often. What’s a person to do when their sweet tooth won’t be denied, and baking a cake is out of the question? Our margarita-inspired no-bake dessert will satisfy the need for a sweet-tart, cool and creamy dessert that’s totally chill. Our version does include a splash of your favorite tequila, but if you prefer an alcohol free version, omit the liquor and the lemon extract, and add a tablespoon of fresh lemon juice. We suggest making two batches of this no-bake dessert and keeping one in the freezer for a quick treat on a hot, busy night.

Alone, it’s the perfect accompaniment for an afternoon cup of tea, or top it with fruit and whipped cream for an upscale shortcake-style dessert everyone will love. Our coconut flour pound cake cuts and tastes best after resting for 24 hours, but don’t let its make-ahead requirement deter you from enjoying this moist and gluten-free cake. If you’re new to baking with coconut flour, the inclusion of 10 eggs in a cake recipe might seem like a mistake. We promise, it’s not! Coconut flour is highly absorbent and requires the addition of more liquids than other types of flours. Learn more about baking with coconut flour here.
